Te Pae Summer Pasta Salad
Salad ingredients
- 500g pasta
- 1 medium sized broccoli
- 200g sundried tomatoes
- 200g green pitted olives
- 200g black pitted olives
- 50g Italian parsley leaf
Mint & Basil dressing ingredients
- 25g basil leaf
- 25g mint leaf
- 50g sugar
- 70g Dijon mustard
- 40ml white wine vinegar
- Splash of lemon juice
- Pinch of salt and pepper
- 250ml oil
Method
- To make the dressing, blend all ingredients together while slowly pouring the oil in to thicken, this can be done with a stick or regular blender
- Bring a pot with 1 litre of water to the boil with a pinch of salt
- Once the water is boiling add your pasta and cook for 8-10 minutes or as the packet directs
- When the pasta is cooked, drain out the water and mix in a bowl with a drizzle of olive oil and leave to cool
- While the pasta is cooling, roughly chop sundried tomatoes, olives and parsley, grate broccoli florets
- Once pasta is cooled, mix all ingredients in a bowl with dressing and serve
