Te Pae Summer Pasta Salad

Salad ingredients
  • 500g pasta
  • 1 medium sized broccoli
  • 200g sundried tomatoes
  • 200g green pitted olives
  • 200g black pitted olives
  • 50g Italian parsley leaf
Mint & Basil dressing ingredients 
  • 25g basil leaf
  • 25g mint leaf
  • 50g sugar
  • 70g Dijon mustard
  • 40ml white wine vinegar
  • Splash of lemon juice
  • Pinch of salt and pepper
  • 250ml oil
Method 
  1. To make the dressing, blend all ingredients together while slowly pouring the oil in to thicken, this can be done with a stick or regular blender
  2. Bring a pot with 1 litre of water to the boil with a pinch of salt
  3. Once the water is boiling add your pasta and cook for 8-10 minutes or as the packet directs
  4. When the pasta is cooked, drain out the water and mix in a bowl with a drizzle of olive oil and leave to cool
  5. While the pasta is cooling, roughly chop sundried tomatoes, olives and parsley, grate broccoli florets
  6. Once pasta is cooled, mix all ingredients in a bowl with dressing and serve
